1 cup ice cubes
2 oz (4 tablespoons) coconut rum
2 oz (4 tablespoons) pineapple juice
1 oz (2 tablespoons) fat-free half-and-half

1 box Betty Crocker® SuperMoist® yellow cake mix
1/3 cup vegetable oil
1/4 cup water
1 teaspoon rum extract
1 can (8 oz) crushed pineapple in juice, undrained
3 eggs
1 teaspoon coconut extract

1 container (12 oz) Betty Crocker® Whipped vanilla frosting
3/4 cup shredded coconut

1 cup coconut milk (I like Silk coconut milk, unsweetened)
1 large frozen banana (chunks)

3 CUPS CANNED UNSWEETENED PINEAPPLE JUICE (ABOUT 4 SMALL CANS)
1 CUP CANNED SWEETENED CREAM OF COCONUT (LIKE COCO LOPEZ, NOT COCONUT MILK), WHISKED WELL
2 TABLESPOONS FRESH LIME JUICE

 

Classic Piña Colada

1/2 cup chopped fresh pineapple
3 ounces (6 tablespoons) silver or white rum
1 1/2 ounces (3 tablespoons) fresh lime juice
3 ounces (6 tablespoons) cream of coconut
2 ounces (1/4 cup) pineapple juice $
3 cups ice
1/2 ounce (1 tablespoon) black strap rum (optional)
Garnishes: fresh pineapple spears, mint leaves
